Force a gradebook to be out of 100 with extra credit

That is everything completed. To review:

1. We switched the gradebook to a simple weighted mean of grades so we could alter the course total to not go over 100.
2. We switched the rest of the categories to simple weighted mean of grade to reassign the weights by changing the category totals. (When using a simple weighted mean of grade aggregation, you can also only apply the aggregation to the categories themselves and not the gradebook total aggregation. It will achieve the same outcome.)
3. We added our extra credit category and marked the category as extra credit, not the item inside it.
